Vegan Chocolate Pudding

INGREDIENTS:

  • 2/3 cup of white sugar

  • 1/4 cup of cocoa powder

  • 3 tablespoons of cornstarcH

  • 2.5 cups of plant-based milk (I used Oatly)

  • 2 tablespoons of vegan butter (I used Miyokos)

  • 1 teaspoon of vanilla extract.

INSTRUCTIONS:

  • In a medium saucepan, whisk together the sugar, cornstarch, and cocoa powder until there aren’t any lumps.

  • Add in your plant-based milk and whisk to combine.

  • Place over medium heat and bring to a simmer while whisking often until the pudding is slightly thickened, smooth, and glossy.

  • Remove from heat and whisk in the vegan butter and vanilla extract.

  • Divide into pudding cups or a large heatproof bowl.

  • Top with some fresh berries - I used raspberries - and enjoy!
